SEAFOOD PASTA

Ingredients

500g wholemeal spaghetti or gluten free spaghetti

400g mixed seafood, fresh (800g frozen)

120g baby spinach

1 punnet cherry tomatoes

1 medium onion, diced

2 garlic cloves, crushed

1 birds eye chilli
-
400g tinned crushed tomatoes

3 cups water, boiled

4 tb extra-virgin olive oil
-
Italian herbs, dried or fresh herbs to taste
Method

Pour boiling water into a large pot and add spaghetti, onion, 3 tablespoons of olive oil, tomato, herbs, and crushed tomato. Simmer on medium heat for 5 minutes.

Pan fry seafood, garlic, and chilli in a tablespoon of olive oil. Add to spaghetti with spinach and stir.

Simmer on high stirring continuously until the sauce has thickened.
Serve with parmesan cheese and a side salad.
