SEAFOOD PASTA

Dairy free and Gluten free optional.  
Serves 7

Ingredients

  • 500g wholemeal spaghetti or gluten free spaghetti

  • 400g mixed seafood, fresh (800g frozen)

  • 120g baby spinach

  • 1 punnet cherry tomatoes

  • 1 medium onion, diced

  • 2 garlic cloves, crushed

  • 1 birds eye chilli

  • 400g tinned crushed tomatoes

  • 3 cups water, boiled

  • 4 tb extra-virgin olive oil

  • Italian herbs, dried or fresh herbs to taste

 

Method

  1. Pour boiling water into a large pot and add spaghetti, onion, 3 tablespoons of olive oil, tomato, herbs, and crushed tomato. Simmer on medium heat for 5 minutes.

  2. Pan fry seafood, garlic, and chilli in a tablespoon of olive oil. Add to spaghetti with spinach and stir.

  3. Simmer on high stirring continuously until the sauce has thickened.   

 

Serve with parmesan cheese and a side salad.
